Ingredients

  • 1/2 cup (50g) rolled oats
  • 1 cup (240g) almond butter
  • 2 tbsp (42g) honey
  • 1/4 cup (30g) vanilla protein powder
  • 1/4 tsp peppermint extract
  • 1/4 cup (40g) mini dark chocolate chips
  • 12 tbsp (15-30ml) unsweetened almond milk (if needed)

Instructions

  1. In a large mixing bowl, combine rolled oats, almond butter, honey, vanilla protein powder, and peppermint extract. Mix thoroughly.
  2. If the mixture is too dry, add 1 tablespoon of almond milk at a time until desired consistency is reached.
  3. Gently fold in the mini dark chocolate chips.
  4. Scoop out 1 tablespoon of the mixture and roll into a ball. Repeat with the remaining mixture.
  5. Place the protein balls on a baking sheet lined with parchment paper.
  6. Refrigerate for at least 20 minutes to firm up.
  7. Store in an airtight container in the refrigerator for up to a week. Enjoy.

Notes

For nut-free substitutions, use sunflower seed butter or soy nut butter. Maple syrup can replace honey for a vegan option. If a sweeter flavor is preferred, try adding a dash more honey or a few mini stevia chocolate chips. Make this recipe ahead by preparing the mixture and refrigerating up to a week in a sealed container; freeze for up to one month. If balls are too sticky, add extra oats; if too crumbly, use more almond milk. Don’t overmix to maintain a chewy texture; ensure chocolate chips are folded in gently to avoid melting.
