  • 1 zucchini, sliced

  • 2 lemons, juiced and zested
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • ½ cup kalamata olives
  • ¼ cup feta cheese, crumbled
  • Salt and pepper to taste
  • Heavy-duty aluminum foil

Instructions

  1. Preheat grill to medium heat.
  2. Cut 4 large sheets of heavy-duty aluminum foil.
  3. In a bowl, mix olive oil, lemon juice, lemon zest, minced garlic, dried oregano, salt, and pepper.
  4. Divide baby potatoes evenly among the foil sheets.
  5. Top each with a chicken thigh, then add zucchini slices, cherry tomatoes, and sliced red onion.
  6. Drizzle each packet with the olive oil mixture, then add kalamata olives.
  7. Seal the foil packets tightly, leaving a little room for steam to circulate.
  8. Grill the packets for 25-30 minutes, until the chicken is cooked through (internal temperature reaches 165°F) and vegetables are tender.
  9. Carefully open the packets, avoiding steam, and top each with crumbled feta cheese before serving.

Notes

For substitutions, use boneless chicken breasts instead of thighs, swap sweet potatoes for regular potatoes, or substitute goat cheese for feta.
