For the Meatloaf

  • 1 lb ground beef
  • 1 small onion, finely chopped
  • ½ cup breadcrumbs
  • ¼ cup milk
  • 1 large egg
  • 2 cloves garlic, minced

  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried thyme (optional)

For the Meatloaf Topping

  • 1 tablespoon Dijon mustard

For the Mashed Potatoes

  • 2 lbs russet potatoes, peeled and cubed
  • ½ cup unsalted butter
  • ½ cup milk (adjust to preferred consistency)
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional for garnish)

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, mix the ground beef, onion, breadcrumbs, milk, egg, garlic, ketchup, Worcestershire sauce, Dijon mustard, salt, pepper, and thyme until just combined.
  • Shape the mixture into a loaf and place it in a greased loaf pan or on a parchment-lined baking sheet.
  • Mix together the topping ingredients: ketchup, brown sugar, and mustard. Spread this evenly over the meatloaf.
  • Bake for 1 hour, or until the meatloaf reaches an internal temperature of 160°F (71°C).
  • While the meatloaf bakes, prepare the mashed potatoes. Boil the peeled and cubed potatoes in salted water for 15-20 minutes until fork-tender.
  • Drain the potatoes and return them to the pot. Add butter, milk, salt, and pepper. Mash until smooth, adjusting milk for consistency.
  • Let the meatloaf rest for 5-10 minutes before slicing. Serve slices alongside the mashed potatoes, garnished with fresh parsley if desired.
