Instructions
- Preheat your oven to 375°F (190°C).
- In a large bowl, mix the ground beef, onion, breadcrumbs, milk, egg, garlic, ketchup, Worcestershire sauce, Dijon mustard, salt, pepper, and thyme until just combined.
- Shape the mixture into a loaf and place it in a greased loaf pan or on a parchment-lined baking sheet.
- Mix together the topping ingredients: ketchup, brown sugar, and mustard. Spread this evenly over the meatloaf.
- Bake for 1 hour, or until the meatloaf reaches an internal temperature of 160°F (71°C).
- While the meatloaf bakes, prepare the mashed potatoes. Boil the peeled and cubed potatoes in salted water for 15-20 minutes until fork-tender.
- Drain the potatoes and return them to the pot. Add butter, milk, salt, and pepper. Mash until smooth, adjusting milk for consistency.
