  • 1 pound raw extra jumbo shrimp (1620 per pound), peeled and deveined
  • ⅓ cup olive oil
  • 2 large garlic cloves, roughly chopped
  • 1 teaspoon minced jalapeño
  • 2 teaspoons brown sugar
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 2 teaspoons tequila (optional)
  • Thin slices of fresh lime
  • Chopped cilantro
  • Fresh lime wedges for serving

Instructions

  1. If using wood skewers, soak them in water for at least 2 hours.
  2. Place shrimp in a wide shallow bowl.
  3. In a small bowl, combine olive oil, garlic, jalapeño, brown sugar, smoked paprika, chili powder, garlic powder, onion powder, cumin, kosher salt, and black pepper. Use an immersion blender to process until smooth.
  4. Pour the marinade over the shrimp and stir to coat. Cover and refrigerate for 2 to 3 hours.
  5. Drizzle tequila over the shrimp if desired. Thread onto skewers with lime slices.
  6. Heat the grill to medium-high. Clean and oil grates well.
  7. Grill the shrimp for 3 to 4 minutes per side, until no longer translucent and nicely charred.
  8. Place on a platter and sprinkle with cilantro. Serve with lime wedges.

Notes

Substitute tequila with extra lime juice for an alcohol-free version. Use large prawns or chicken pieces as alternatives. For meal prep, marinate shrimp up to 12 hours, keeping them refrigerated. Store grilled kabobs in an airtight container for up to 2 days; reheat gently to avoid overcooking. If kabobs stick to the grill, ensure grates are well oiled and preheated.
