Description

This Magic Lemon Cobbler features a rich, buttery base and a vibrant lemon filling for a dessert with contrasting flavors and textures. A simple batter is poured over melted butter, then topped with tangy lemon pie filling or lemon curd, creating layers that bake into a soft, cake-like cobbler with crisp edges. It’s easy to prepare and sure to brighten any meal.

Ingredients

Scale
  • ½ cup unsalted butter
  • 1 cup all-purpose flour
  • 1½ teaspoons baking powder
  • ¼ teaspoon salt
  • 1 cup granulated sugar
  • 1 cup buttermilk or whole milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon extract (optional)
  • 21 oz lemon pie filling or lemon curd

Instructions

  1. Preheat oven to 350°F.
  2. Melt butter in a 9×9-inch baking dish in the oven.
  3. In a bowl, whisk together flour, baking powder, salt, and sugar.
  4. Add buttermilk, vanilla, and lemon extract to the dry ingredients; whisk until smooth.
  5. Pour the batter over the melted butter in the baking dish; do not stir.
  6. Spoon lemon filling evenly over the batter; do not stir.
  7. Bake for 45-55 minutes, until golden brown and edges are set.
  8. Allow to cool for 10-15 minutes before serving.

Notes

For a dairy-free version, use plant-based butter and non-dairy milk. Swap lemon curd with any fruit curd or pie filling for variation. Store leftovers covered in the fridge for up to 3 days; reheat gently before serving. If the cobbler is too runny, ensure baking time is adequate and your oven is calibrated. Avoid stirring the batter and filling together for distinct layers.
