Instructions

  1. Preheat oven to 350°F. Line 2 baking sheets with parchment paper.
  2. In a small bowl, whisk together flour, cornstarch, and baking powder.
  3. Cream butter, sugar, lemon zest, and lavender until light and fluffy, about 2-3 minutes.
  4. Mix in egg until well combined.
  5. Add flour mixture on low speed, mixing until just combined.
  6. Use a small cookie scoop to drop 1-tablespoon balls onto baking sheets, about 2 inches apart.
  7. Gently flatten each ball to about 1/3 inch thick.
  8. Bake for 12-15 minutes until centers are set and edges are slightly golden.
