Instructions
- Preheat oven to 350°F. Line 2 baking sheets with parchment paper.
- In a small bowl, whisk together flour, cornstarch, and baking powder.
- Cream butter, sugar, lemon zest, and lavender until light and fluffy, about 2-3 minutes.
- Mix in egg until well combined.
- Add flour mixture on low speed, mixing until just combined.
- Use a small cookie scoop to drop 1-tablespoon balls onto baking sheets, about 2 inches apart.
- Gently flatten each ball to about 1/3 inch thick.
- Bake for 12-15 minutes until centers are set and edges are slightly golden.
