  • 1/2 cup granulated sugar

  • 2 tablespoons heavy cream
  • 1 tablespoon cornstarch
  • 1/4 teaspoon vanilla extract
  • Pinch of salt
  • Powdered sugar (for dusting)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Roll out the thawed puff pastry sheet on a lightly floured surface until smooth. Cut into 12 equal squares and place them onto the prepared baking sheet.
  3. In a medium saucepan, whisk together eggs, granulated sugar, lemon juice, lemon zest, cornstarch, vanilla extract, and salt until smooth.
  4. Place saucepan over medium-low heat, stirring constantly, until the mixture thickens, about 5-7 minutes. Remove from heat.
  5. Stir in softened butter and heavy cream until fully combined and custard is smooth. Allow to cool for 5 minutes.
  6. Spoon a small amount of lemon custard (about 1 tablespoon) onto the center of each pastry square.
  7. Fold each pastry over to form a triangle and press edges to seal. Crimp with a fork if desired.
  8. Bake for 15-18 minutes or until puffed and golden brown.
  9. Remove from oven and allow to cool slightly. Dust generously with powdered sugar before serving.

Notes

For a dairy-free pufflet, use plant-based butter and cream alternatives. Store cooled pufflets in an airtight container at room temperature for up to 2 days, though best enjoyed fresh. If the custard appears too runny, extend cooking time by 1-2 minutes, stirring constantly. Ensure pastry edges are well-sealed to prevent custard leakage during baking. Make custard ahead and chill for up to two days.
