  • 1/4 cup coconut flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 4 large eggs
  • 1/3 cup melted butter
  • 1/4 cup sugar-free sweetener (erythritol)
  • 1 teaspoon vanilla extract
  • 1 1/2 cups grated zucchini, well drained
  • 1/4 cup chopped pecans
  • 2 tablespoons cream cheese, softened

Instructions

  1. Preheat oven to 325°F and grease an 8×4 loaf pan with butter.
  2. In a bowl, mix almond flour, coconut flour, baking powder, salt, cinnamon, and nutmeg.
  3. In another bowl, beat eggs, melted butter, sweetener, vanilla, and softened cream cheese until smooth.
  4. Press grated zucchini in paper towels to remove as much moisture as possible.
  5. Combine wet and dry ingredients, mixing until just incorporated.
  6. Fold in drained zucchini and chopped pecans.
  7. Pour batter into prepared pan and bake for 45-55 minutes, until golden and a toothpick comes out with a few moist crumbs.
  8. Cool completely in the pan before slicing and serving.

Notes

Almond flour can be substituted with hazelnut flour for a unique flavor, and pecans can be swapped with walnuts. To reduce dairy, substitute melted butter with coconut oil and cream cheese with a dairy-free alternative. Store leftover bread in an airtight container in the refrigerator for 5 days, or freeze for up to 3 months. If the loaf is too moist, ensure you wring out more liquid from the zucchini and bake until a toothpick yields only a few moist crumbs. Avoid overmixing to maintain a tender texture.
