  • 1 box yellow cake mix (15.25 oz)
  • 1 cup crushed pineapple with juice
  • 3 large eggs
  • 1 teaspoon vanilla extract

For the Pineapple Glaze

  • 1/2 cup fresh pineapple juice (or juice from the crushed pineapple)
  • 1/4 cup granulated sugar
  • 2 tablespoons butter
  • 1 tablespoon cornstarch (to thicken)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan or line it with parchment paper.
  2. In a mixing bowl, combine cake mix, crushed pineapple with juice, vegetable oil, eggs, and vanilla extract. Optionally, add brown sugar.
  3. Mix the ingredients until smooth, about 2 minutes with an electric mixer or whisk.
  4. Pour batter into the prepared pan and spread evenly.
  5. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Cool completely in the pan.
