Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, garlic powder, and thyme.
  3. In a separate bowl, beat eggs, oil, buttermilk, and honey until well combined.
  4. Add wet ingredients to the dry ingredients. Stir gently until just combined.
  5. Fold in grated zucchini, cheese, and green onions. Do not overmix.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Substitute whole wheat flour for a healthier twist or use Monterey Jack instead of cheddar. If buttermilk is unavailable, mix 1/2 cup milk with 1/2 tablespoon vinegar. Squeeze excess water from zucchini to avoid soggy bread. Bread can be made ahead and stored in an airtight container at room temp for 2 days or refrigerated up to 5 days. If bread doesn’t rise, check freshness of leavening agents.
