Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
- In a large bowl, whisk together flour, baking powder, baking soda, salt, garlic powder, and thyme.
- In a separate bowl, beat eggs, oil, buttermilk, and honey until well combined.
- Add wet ingredients to the dry ingredients. Stir gently until just combined.
- Fold in grated zucchini, cheese, and green onions. Do not overmix.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50-55 minutes, or until a toothpick inserted into the center comes out clean.

Notes
Substitute whole wheat flour for a healthier twist or use Monterey Jack instead of cheddar. If buttermilk is unavailable, mix 1/2 cup milk with 1/2 tablespoon vinegar.
