Description

This comprehensive guide details how to freeze zucchini to maintain its freshness, texture, and flavor for up to 6 months. Learn step-by-step how to blanch and freeze zucchini slices, ensuring they remain vibrant and ready to use in recipes year-round. With clear instructions and tips for optimal storage, this method reduces waste and preserves zucchini at its peak.

Ingredients

Scale
  • 2 zucchini
  • 1 large pot boiling water
  • 1 large bowl ice water

Instructions

  1. Wash the zucchini thoroughly and cut them into 1/4 inch thick slices.
  2. Blanch the zucchini by filling a large pot about 2/3 full with water and bringing it to a full boil.
  3. Add the zucchini slices to the boiling water and cook for just one minute. Do not add salt.
  4. Remove the zucchini from the pot using a slotted spoon and immediately transfer to a bowl of ice water.
  5. Let the zucchini chill in the ice water bath for 2 minutes, then drain well.
  6. Pat the zucchini slices dry with a paper towel and spread them out on a baking sheet.
  7. Place the baking sheet in the freezer for 1-2 hours, or until the zucchini slices are frozen solid.
  8. Transfer the frozen zucchini slices to freezer-safe storage bags and freeze for up to several months.

Notes

For substitution, yellow squash can be used instead of zucchini. If you lack ice, rinsing with very cold water can also help stop the cooking process, though ice water is best. Make ahead by freezing in smaller portioned bags for easy grab-and-use convenience. Store zucchini flat in the freezer to prevent clumping. Common troubleshooting: If zucchini turns mushy after freezing, ensure you’re not over-blanching and dry them thoroughly before freezing. For best texture, use in cooked dishes rather than raw applications after thawing.
