Ingredients

Scale
  • 1 lb ground beef
  • 1 cup white or brown rice, cooked
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 tablespoon olive oil
  • 1 cup shredded cheddar cheese
  • 1 cup lettuce, shredded
  • 1/2 cup salsa
  • 1/2 cup guacamole
  • 1/4 cup sour cream (optional)
  • 1/4 cup chopped green onions (optional)

Instructions

  • Cook the Rice: Prepare the rice according to the package instructions. Set aside once cooked.
  • Cook the Ground Beef: Heat olive oil in a large skillet over medium heat. Add the ground beef and cook, breaking it apart with a wooden spoon, until browned. Drain any excess fat.
  • Season the Beef: Sprinkle the taco seasoning over the browned beef. Add water and stir to combine. Let the mixture simmer for 3-5 minutes, or until thickened.
  • Assemble the Bowls: Start with a base of cooked rice in each bowl. Add a generous portion of seasoned ground beef on top.
  • Add Toppings: Layer on your favorite toppings, including shredded cheese, lettuce, salsa, guacamole, sour cream, and green onions.
  • Serve: Serve immediately and enjoy a hearty, flavorful burrito bowl.

Notes

  • For a lighter option, substitute ground beef with ground turkey or chicken.
  • Swap white or brown rice with cauliflower rice or quinoa for a low-carb alternative.
  • Add black beans, corn, or diced tomatoes to make the dish even more filling.
  • Store leftovers in an airtight container in the fridge for up to 3 days. Reheat beef and rice before serving, and add fresh toppings.
  • Perfect for meal prep—make ahead and store components separately to build fresh bowls throughout the week!
