Description

Grilled Salmon with Avocado Bruschetta delivers a vibrant fusion of smoky, flaky salmon paired with refreshing avocado bruschetta. Tender wild salmon fillets are rubbed with olive oil, salt, and pepper, then expertly grilled to lock in succulence. A bright bruschetta topping of creamy avocado, juicy cherry tomatoes, sweet red onion, garlic, fragrant basil, and tangy lemon juice is served over crisp grilled bread for a balanced, nutrient-rich meal ideal for warm-weather dining, dinner parties, or healthy weeknight meals.

Ingredients

Scale
  • 4 salmon fillets (6 oz each)
  • 2 ripe avocados, diced
  • 1 cup cherry tomatoes, halved
  • ¼ red onion, finely diced
  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 2 cloves garlic, minced
  • ¼ cup fresh basil, chopped
  • Salt and black pepper to taste
  • 4 thick slices crusty bread

Instructions

  1. Preheat the grill to medium-high heat.
  2. Season salmon fillets with salt, black pepper, and 1 tablespoon olive oil.
  3. In a bowl, combine diced avocado, cherry tomatoes, red onion, garlic, basil, lemon juice, and remaining olive oil.
  4. Season the avocado bruschetta mixture with salt and pepper to taste.
  5. Grill the salmon for 4-5 minutes per side, until cooked through and flaky.
  6. Toast the crusty bread slices on the grill for about 2 minutes per side until golden.
  7. Top toasted bread with the avocado bruschetta mixture.
  8. Serve each salmon fillet alongside the avocado bruschetta-topped bread.

Notes

For substitutions, try using cooked chicken breast or firm tofu for a non-salmon alternative. Use sourdough or gluten-free bread if preferred, and ripe roma tomatoes for cherry tomatoes. Prepare the bruschetta topping up to 2 hours ahead (add avocado just before serving to prevent browning). Store leftovers separately in airtight containers in the refrigerator for up to 2 days. If the salmon is sticking, ensure the grill is well-oiled and properly preheated. Do not overcook salmon to prevent dryness; remove at 145°F internal temperature.
