  • 4 large ripe peaches, halved and pitted
  • 2 tbsp honey
  • 1 tbsp olive oil
  • 1 tsp vanilla extract
  • 1/4 tsp cinnamon
  • Pinch of salt
  • Fresh thyme sprigs
  • Mascarpone or vanilla ice cream

Instructions

  1. Preheat grill to medium-high heat.
  2. In a small bowl, mix honey, olive oil, vanilla extract, cinnamon, and salt.
  3. Brush the peach halves with the honey mixture.
  4. Place peaches cut-side down on the grill and cook for 4-5 minutes.

Notes

If mascarpone or vanilla ice cream is unavailable, substitute with Greek yogurt, coconut cream, or whipped cream. Prepare the honey mixture a day ahead and refrigerate; reheat slightly before use. Store grilled peaches in an airtight container for up to 2 days. If peaches stick to the grill, ensure it’s well-oiled. For firmer peaches, reduce grilling time slightly. Slightly underripe peaches work best to maintain structure.
