  • 4 lobster tails (68 oz each)
  • ½ cup unsalted butter, softened
  • 4 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh chives, chopped
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • ¼ tsp paprika
  • Salt and white pepper to taste
  • Lemon wedges for serving

Instructions

  1. Using kitchen shears, cut through the top shell of each lobster tail.
  2. Gently pull the meat up and rest it on top of the shell.
  3. In a bowl, mix softened butter, minced garlic, chopped parsley, chives, lemon juice, lemon zest, and paprika.
  4. Season the lobster meat with salt and white pepper.
  5. Preheat the grill to medium-high heat and oil the grates to prevent sticking.
  6. Generously brush the lobster meat with the herb butter mixture.
  7. Grill the lobster tails shell-side down for 5 to 6 minutes.
  8. Flip and grill for an additional 4 to 5 minutes, or until the meat is opaque and cooked through.
  9. Brush with remaining herb butter and serve immediately with lemon wedges.

Notes

Substitute fresh parsley and chives with dried versions if necessary (use half the amount). For a dairy-free version, replace butter with vegan butter. Lobster tails can be split and prepped ahead – refrigerate until ready to grill. Store leftovers in an airtight container for up to 2 days; reheat gently to avoid drying out. If lobster appears tough, reduce grill time and check temperature. Pair with green vegetables or salads.
