  • 1 cup granulated sugar
  • 2 large eggs

  • 2 cups grated zucchini

  • 1 tablespoon lemon zest

Instructions

  1. Preheat oven to 350°F. Grease and flour a 9×5 loaf pan with gluten-free flour.
  2. Whisk together the gluten-free flour blend, baking soda, salt, cinnamon, ginger, and nutmeg.
  3. In a large bowl, beat together the vegetable oil, sugar, eggs, and vanilla until well combined.
  4. Squeeze the grated zucchini in a clean towel to remove excess moisture.
  5. Add the dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in the squeezed zucchini, mini chocolate chips, and lemon zest.
  7. Pour the batter into the prepared pan and bake for 55 to 65 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool in the pan for 15 minutes before turning out onto a rack to cool completely.

Notes

Substitute mini chocolate chips with walnuts or dried cranberries. Use coconut oil or melted butter instead of vegetable oil for a flavor shift. Store cooled loaf wrapped at room temperature for up to 3 days or freeze slices for 2 months. If bread sinks, check oven temperature accuracy and ensure zucchini is squeezed well. Make batter ahead and refrigerate overnight before baking for convenience.
