Instructions
- Preheat oven to 350°F (180°C). Butter and flour a 9-inch round cake pan.
- In a large bowl, whisk together eggs, yogurt, oil, and vanilla extract until smooth.
- Add granulated sugar and mix until well combined.
- Add lemon zest if using.
- In a separate bowl, whisk together flour, baking powder, and salt.
- Gently fold the dry ingredients into the wet mixture until smooth and fully combined.
- Pour batter into the prepared pan and tap lightly to release any air bubbles.
