Description

Finger Food Pumpkin Cookies for Babies are wholesome, soft cookies made with oats, pumpkin purée, and natural sweeteners. These cookies contain no refined sugar and can be customized with applesauce, banana, or various mix-ins. Ingredients

  • 1/2 cup rolled oats, processed into flour
  • 3/4 cup rolled oats, left whole
  • 3/4 cup pumpkin purée or mashed sweet potato
  • 1/4 cup unsweetened applesauce or mashed banana
  • 1 teaspoon pumpkin pie spice blend
  • 1 to 3 tablespoons maple syrup (optional)
  • 1/2 cup mix of raisins, chocolate chips, or chopped nuts (optional)

Instructions

  1. Preheat oven to 350°F and line a cookie sheet with parchment paper.
  2. Process 1/2 cup of rolled oats in a food processor until you have a fine flour.
  3. In a large bowl, combine the oat flour, whole oats, pumpkin purée, applesauce or banana, pumpkin pie spice, maple syrup, and optional mix-ins. Stir to form a sticky dough.
  4. Portion the dough onto the baking sheet using a spoon or small scoop, shaping into cookies as desired. Cookies will not spread.
  5. Bake for 10-12 minutes until set and lightly golden on the bottom.
  6. Cool completely on a wire rack before serving.

Notes

Substitute pumpkin with mashed sweet potato or applesauce/banana for variety. Use raisins for sweetness or nut pieces for older children (avoid nuts for babies under 1 year). Cookies can be made ahead and stored in an airtight container for 3 days or frozen for up to 2 months. If cookies are too crumbly, add a teaspoon more applesauce. If too wet, mix in a bit more oat flour until a sticky, holdable dough forms.
