Ingredients
- 2.5 lb Potatoes, Russet or Yukon Gold
- 2 oz-4 oz (¼–1/2 Cup) Oil, or enough to cover the bottom of roasting pan
- 1 teaspoon Salt
- 1 teaspoon Pepper
Instructions
- Boil a kettle to fill a large heavy-bottomed pot with water to boil the potatoes in. Add ½ teaspoon of salt to the water.
- Peel and chop the potatoes. Chop the two ends off, slice the large middle section in half lengthwise, then chop those in halves depending on the size of the potato.
- Once the water is boiling, add the potatoes and parboil them for 10 minutes. Preheat the oven to 425°F and place a large roasting pan with 2 oz of oil inside to warm up.
- After parboiling, drain the potatoes in a colander and shake them for 30 seconds to a minute to rough them up.
- Carefully take the hot pan out of the oven and add the potatoes in a single layer, making sure they don’t touch each other.
- Roast for 20 minutes, then carefully flip the potatoes. Cook for another 15 minutes, rotate again, cook another 15 minutes, and rotate one last time. After another 15 minutes, the potatoes should be golden brown.
- Let the potatoes cool for five minutes before serving. Season with additional salt and pepper to taste.
Notes
For ingredient substitutions, you can use olive oil instead of vegetable oil for a healthier option. For make-ahead, parboil and store the potatoes in a cool place, then roast them just before serving. Store leftovers in an airtight container in the fridge for up to 3 days. If potatoes are not crispy, ensure they have enough space on the roasting pan and did not overcrowd. Use a hot pan and preheat the oil properly.
