Description

  • 4 medium zucchini, coarsely shredded
  • ½ teaspoon salt
  • ½ cup all-purpose flour
  • 2 large eggs, beaten
  • ⅓ cup shredded cheese (Cheddar or Parmesan)
  • 1 tablespoon chopped chives
  • Salt and pepper to taste
  • Olive oil for frying

Instructions

  1. Place zucchini in a colander and toss with ½ teaspoon salt. Let stand in sink for 10 minutes.
  2. Transfer zucchini to a clean tea towel and squeeze out excess liquid.
  3. In a medium mixing bowl, combine flour, eggs, cheese, chives, salt and pepper until smooth.
  4. Add zucchini and stir well.
  5. Heat olive oil in a large skillet over medium-high heat.
  6. Drop batter by tablespoonfuls into skillet, flattening with the back of a spoon.
  7. Fry about 2 minutes on each side until crisp and golden.
  8. Serve hot with sour cream for dipping.

Notes

For gluten-free fritters, use gluten-free flour. Substitute cheddar or parmesan with mozzarella for a milder taste, or use scallions in place of chives. Make ahead by prepping the batter and frying just before serving. Store leftovers in an airtight container for up to 3 days; reheat in a skillet for crisp results. If fritters are soggy, squeeze out more zucchini moisture before mixing.
