Easy Zucchini Fritters are a quick and delicious way to enjoy fresh zucchini. Shredded zucchini is salted, drained, then mixed with eggs, flour, cheese, and chives to form a flavorful batter. Ingredients
- 4 medium zucchini, coarsely shredded
- ½ teaspoon salt
- ½ cup all-purpose flour
- 2 large eggs, beaten
- ⅓ cup shredded cheese (Cheddar or Parmesan)
- 1 tablespoon chopped chives
- Salt and pepper to taste
- Olive oil for frying
Instructions
- Place zucchini in a colander and toss with ½ teaspoon salt. Let stand in sink for 10 minutes.
- Transfer zucchini to a clean tea towel and squeeze out excess liquid.
- In a medium mixing bowl, combine flour, eggs, cheese, chives, salt and pepper until smooth.
- Add zucchini and stir well.
- Heat olive oil in a large skillet over medium-high heat.
- Drop batter by tablespoonfuls into skillet, flattening with the back of a spoon.
- Fry about 2 minutes on each side until crisp and golden.
- Serve hot with sour cream for dipping.
Notes
For gluten-free fritters, use gluten-free flour. Substitute cheddar or parmesan with mozzarella for a milder taste, or use scallions in place of chives. Make ahead by prepping the batter and frying just before serving. Store leftovers in an airtight container for up to 3 days; reheat in a skillet for crisp results. If fritters are soggy, squeeze out more zucchini moisture before mixing.
