Ingredients

- 2 large eggs

Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
- In a large bowl, whisk together flour, baking soda, salt, cinnamon, and nutmeg.
- In a separate bowl, mix vegetable oil, applesauce, granulated sugar, eggs, and vanilla extract until smooth.
- Squeeze excess moisture from grated zucchini with paper towels.
- Add wet mixture to the dry ingredients and stir until just combined.
- Gently fold in grated zucchini and chopped walnuts (if using).
- Spread batter evenly into the prepared loaf pan.
- Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
- Cool bread in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
Substitute half or all the all-purpose flour with whole wheat for extra fiber. Use coconut oil in place of vegetable oil or a flax egg for a vegan version. Store cooled bread wrapped in plastic or airtight container at room temperature for up to 3 days, or freeze slices for up to 3 months. To prevent soggy bread, ensure to thoroughly squeeze moisture from zucchini. If the loaf browns quickly, tent with foil during baking.
