Ingredients
- 1 cup dark brown sugar, packed
- 1 cup (2 sticks) unsalted butter, at room temperature
- 3 large eggs, at room temperature
- 1 3/4 cups cake flour (or all purpose flour)
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/2 tsp allspice
- 1/2 tsp freshly grated nutmeg
- 1/4 tsp ground cloves
- 1/2 cup cultured buttermilk
- 2 cups diced peaches, skin on (about 3 smallish peaches)
- 1 tsp coarse sparkling sugar
Instructions
- Preheat oven to 350°F (175°C). Butter a 9×5 inch loaf pan and line it with parchment paper, leaving long ends for easy removal.
- Cream brown sugar and butter in a stand mixer for 5 minutes until light and fluffy.
- Beat in eggs one at a time, ensuring each is fully incorporated. Continue beating for 2-3 minutes. The batter should be light and fluffy.
- In a separate bowl, whisk together flour, baking powder, salt, cinnamon, allspice, nutmeg, and cloves.
- Add dry ingredients to the mixer alternately with buttermilk, beginning and ending with dry ingredients. Finish mixing by hand, ensuring the batter is thoroughly mixed but not overbeaten.
- Fold in diced peaches gently.
- Transfer the batter to the prepared pan and spread evenly. Sprinkle the top lightly with sparkling sugar.
- Bake in the center of the oven for 50-55 minutes, or until a toothpick inserted in the center comes out clean or with moist crumbs.
- Cool in the pan for 10 minutes, then lift out using the parchment paper handles. Slice warm or at room temperature.
Notes
For substitutions, you can use all-purpose flour instead of cake flour and regular milk with a splash of lemon juice if buttermilk is unavailable. Store peach bread wrapped tightly at room temperature for up to 2 days, or refrigerate for up to a week. Freeze for up to 2 months. If your bread is too dense, ensure you cream the butter and sugar adequately and do not overmix the batter. Overripe or juicy peaches may increase moisture, so consider lightly dusting them with flour before folding in. For a nutty twist, add chopped pecans or walnuts.
