Perfect for weeknight dinners, this recipe balances aromatic spices, cheesy richness, and a tender texture to delight your taste buds.
Ingredients
- 1 pound lean ground beef
- 8-10 flour or corn tortillas
- 1 cup enchilada sauce
- 1 cup shredded cheddar or Monterey Jack cheese
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/3 cup sour cream
Instructions
- Brown the beef and onion together in a skillet over medium heat for 5-7 minutes, breaking up clumps and cooking until onions are translucent and beef is no longer pink.
- Add minced garlic, cumin, and chili powder to the skillet. Sauté for 1 minute until fragrant and spices release their oils.
- Lay out each tortilla and spoon a generous amount of the beef mixture down the center. Roll tightly and place seam side down in a greased baking dish.
- Pour enchilada sauce evenly over the rolled tortillas, coating all edges. Sprinkle shredded cheese evenly over the top.
- Bake uncovered in a preheated oven at 350°F (175°C) for 20-25 minutes until cheese is bubbly and golden and sauce has thickened slightly.
- Let the enchiladas rest for a few minutes before serving to allow flavors to set.
Notes
Substitute ground turkey or chicken for a leaner protein option. Use gluten-free tortillas if needed. Prepare the filling a day ahead and refrigerate for enhanced flavor. Store leftovers in an airtight container for up to 3 days, reheating covered to retain moisture. Avoid overcooking beef to prevent dryness and ensure onions are soft to develop depth of flavor.
