  • 2 medium zucchini, sliced
  • 2 medium yellow squash, sliced
  • 4 tablespoons chopped fresh basil
  • 2 tablespoons thinly sliced green onion
  • 1/2 teaspoon dried thyme
  • 3/4 teaspoon garlic powder
  • 1 cup grated mozzarella cheese
  • 1/2 cup coarsely grated Parmesan cheese, plus more for topping
  • Salt and fresh ground black pepper to taste

Instructions

  1. Preheat the oven to 350°F. Spray an 8×8 inch or 8×11 inch baking dish with nonstick spray.
  2. Wash and slice the zucchini and yellow squash.
  3. Chop the basil and slice the green onions.
  4. In a large bowl, combine the sliced zucchini, sliced yellow squash, chopped basil, sliced green onions, dried thyme, garlic powder, 1/2 cup mozzarella cheese, and 1/2 cup Parmesan cheese. Season with salt and fresh ground black pepper to taste.
  5. Spread the mixture evenly in the prepared baking dish. Bake uncovered for 25 to 30 minutes.
  6. Sprinkle the remaining mozzarella cheese and additional Parmesan cheese on top. Bake for another 10 to 15 minutes or until the cheese is melted and lightly browned.
  7. Serve warm.

Notes

For substitutions, use any mix of summer squash or swap mozzarella with cheddar or provolone. This bake can be made a day ahead; let it cool, cover, and refrigerate. To reheat, bake at 350°F until warmed through. Store leftovers in an airtight container for up to 3 days. If your dish turns watery, salt the squash slices and let them sit 15 minutes, then blot dry before assembling.
