  • 13 ounces vanilla cake mix, divided (French Vanilla)
  • 1/4 cup brown sugar (light or dark brown)
  • 1 tablespoon cornstarch
  • 2/3 cup whole milk
  • 8 tablespoons salted butter, melted
  • Optional: vanilla ice cream
  • Optional: whipped cream

Instructions

  1. Preheat oven to 350°F and grease a 9×13 inch baking dish.
  2. In a bowl, toss frozen mixed berries with 1/2 cup cake mix, brown sugar, and cornstarch.
  3. Spread the berry mixture evenly in the prepared baking dish.
  4. In a separate bowl, whisk together the remaining cake mix, milk, and melted butter to form a batter.
  5. Drop spoonfuls of batter over the berry mixture and spread gently with an offset spatula.
  6. Bake for 45-55 minutes until the filling is bubbling and the top is golden brown.
  7. Let cool for 5 minutes before serving. Serve warm with optional vanilla ice cream or whipped cream.

Notes

Substitute frozen berries with fresh if desired; adjust sugar based on berry sweetness. For a dairy-free version, use plant-based milk and vegan butter. Prepare up to 1 day in advance, reheat before serving. Store covered in the refrigerator for up to 3 days. If the topping browns too quickly, cover loosely with foil. To remedy runny filling, ensure use of cornstarch and bake until bubbly.
