Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin pan with cupcake liners.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt.
  3. In a large bowl, combine pumpkin puree, granulated sugar, vegetable oil, eggs, and vanilla extract. Whisk until smooth.
  4. Gradually add dry ingredients to wet ingredients, stirring until just combined.
  5. Divide batter evenly among cupcake liners, filling each about three-quarters full.
  6. Bake for 18-20 minutes or until toothpick comes out clean. Cool completely.
  7. Use a small spoon to create a hole in center of each cupcake. Fill with about a teaspoon of dulce de leche.
  8. For frosting: Beat softened butter until creamy. Add powdered sugar, vanilla extract, and dulce de leche. Beat until smooth and fluffy.
  9. Frost cupcakes and drizzle with additional dulce de leche.
