Ingredients
- Enough pineapple juice to cover zucchini
- 4 cups zucchini, peeled, de-seeded, and cut into cubes
- 2 tablespoons powdered sugar
- 2 tablespoons corn or tapioca starch

- Pour pineapple juice into a large pot, ensuring there is enough to cover the zucchini.
- Add peeled, de-seeded, and cubed zucchini to the pot.
- Bring to a boil, then reduce heat to medium and simmer until the zucchini is soft and translucent.
- Using a slotted spoon, transfer zucchini cubes to a colander to drain.
- Arrange the zucchini pieces on a dehydrator rack.
- Dehydrate at 130°F (54°C) for about 18 hours or until fully dried.
- Once dried, combine powdered sugar and starch in a plastic bag.
