  • 2 cups Nacho Cheese Doritos, slightly crushed
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 can (10 oz) Rotel diced tomatoes with green chilies, drained
  • 1 teaspoon taco seasoning
  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup chopped onion
  • 1/2 cup milk
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • Chopped fresh cilantro, for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a skillet, heat olive oil over medium heat and sauté onions until soft. Set aside.
  3. In a large bowl, combine shredded chicken, cream of chicken soup, sour cream, drained Rotel, sautéed onions, milk, taco seasoning, salt, and pepper.
  4. Stir in 1 cup cheddar cheese and 1/2 cup Monterey Jack cheese.
  5. Spread half the Doritos in the prepared baking dish. Layer half the chicken mixture over the Doritos.
  6. Repeat layers with remaining Doritos and chicken mixture.
  7. Top with the remaining cheddar and Monterey Jack cheese.
  8. Bake uncovered for 25-30 minutes until bubbly and the cheese is melted.
  9. Let cool for a few minutes, garnish with cilantro if desired, and serve.

Notes

You can substitute shredded rotisserie chicken for convenience or swap cream of mushroom soup for cream of chicken if desired. Greek yogurt may replace sour cream for a lighter option. Store leftovers in an airtight container in the refrigerator for 3 days and reheat at 350°F until warmed. To avoid soggy Doritos, layer just before baking. If the casserole appears dry, add 1/4 cup extra milk to the mix. For a spicier kick, add extra green chilies or hot sauce. Freezes well if assembled before baking.
