Instructions

  5. Hull strawberries by cutting off the green tops.
  6. Slice strawberries into 1/4-inch thick slices.
  7. Add strawberries to the bowl with cucumbers.
  8. In a small bowl, combine olive oil, balsamic vinegar, and honey.
  9. Whisk until the honey is dissolved and the mixture is fully combined.
  10. Add salt and pepper to the dressing; whisk again.
  11. Pour the dressing over the cucumber and strawberries.
  12. Gently toss to coat all pieces evenly.
  13. Wash and dry fresh mint leaves.
  14. Slice mint into thin ribbons (chiffonade).
  15. Add mint to the salad and toss gently.

For substitutions, use maple syrup instead of honey for a vegan option or white wine vinegar if balsamic is unavailable.
