Instructions

  1. Preheat the oven to 425°F (218°C).
  2. Slice zucchinis into 3-inch lengths and 1/2-inch thick strips.
  3. Beat eggs with salt and 3 dashes of black pepper in a bowl.
  4. Mix panko and parmesan cheese together on a large plate or container.
  5. Dip zucchini strips in the egg mixture, shaking off excess.
  6. Roll in panko-parmesan mixture, pressing gently to coat.
