This Creamy Mushroom and Asparagus Chicken Penne is a comforting and flavorful weeknight dinner that’s quick to prepare and packed with wholesome ingredients. Tender chicken, earthy mushrooms, crisp asparagus, and a creamy sauce come together in this one-pan wonder that’s sure to become a family favorite. Perfect for busy nights or meal prep, this dish is both hearty and satisfying.

Ingredients

Scale

12 oz penne pasta

2 tablespoons olive oil

1 pound boneless, skinless chicken breast, cut into bite-sized pieces

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

1 cup sliced mushrooms (cremini or button mushrooms work well)

1 cup chopped asparagus (trimmed and cut into 1-inch pieces)

1 cup heavy cream or half-and-half

1/2 cup grated parmesan cheese (optional, for garnish)

Fresh herbs (such as parsley or basil, for garnish)

Instructions

Cook the Pasta: Bring a large pot of salted water to a boil. Add the penne pasta and cook according to the package instructions until al dente. Drain and set aside.

Cook the Chicken: Heat olive oil in a large skillet over medium heat. Add the chicken pieces and season with garlic powder, onion powder, salt, and pepper. Cook for 6-7 minutes, stirring occasionally, until the chicken is browned and cooked through.

Add the Veggies: To the skillet, add the sliced mushrooms and chopped asparagus. Sauté for 3-4 minutes, until the vegetables are tender and the mushrooms have released their moisture.

Make the Sauce: Pour in the heavy cream or half-and-half, stirring to combine. Let the sauce simmer for 3-5 minutes, allowing it to thicken slightly. Taste and adjust seasoning with more salt and pepper if needed.

Combine: Add the cooked pasta to the skillet, tossing everything together to coat the pasta in the creamy sauce. If the sauce is too thick, add a splash of pasta water to loosen it up.

Serve: Dish out the pasta into bowls and garnish with grated parmesan cheese and fresh herbs if desired. Serve hot and enjoy!

Notes

Vegetarian Option: Skip the chicken and add extra veggies like spinach, zucchini, or bell peppers.

Gluten-Free: Use gluten-free penne pasta.

Dairy-Free: Substitute the heavy cream with coconut cream or a dairy-free alternative.

Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet with a splash of cream or water.
