This recipe is an ideal weeknight dinner that delivers comfort and flavor in every bite.
Ingredients
- 1 lb fettuccine or penne pasta
- 2 boneless skinless chicken breasts, cubed
- 3 cups fresh broccoli florets
- 4 tablespoons butter
- 4 cloves garlic, minced
- 2 cups heavy cream
- 1 cup freshly grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- Cook pasta according to package directions, adding broccoli florets in the last 3 minutes of cooking.
- Drain pasta and broccoli, then set aside.
- Season chicken cubes with salt, pepper, and garlic powder.
- In a large skillet, heat olive oil over medium heat. Cook chicken until golden brown and fully cooked through, about 5-7 minutes. Remove chicken and set aside.
- In the same skillet, melt butter and sauté minced garlic for 30 seconds until fragrant.
- Add heavy cream, garlic powder, and Italian seasoning. Simmer until sauce thickens, approximately 5 minutes.
- Stir in grated Parmesan cheese, mixing until the cheese melts and sauce is smooth.
- Return cooked pasta, broccoli, and chicken to the skillet. Toss everything together until evenly coated with sauce.
- Garnish with chopped fresh parsley before serving.
Notes
You can substitute chicken with shrimp or tofu for different protein options. Broccoli can be replaced with asparagus or peas if preferred. Make ahead by preparing the sauce and chicken in advance; combine with fresh-cooked pasta before serving. Store leftovers in an airtight container in the refrigerator for up to 3 days; reheat gently with a splash of milk or cream to maintain the sauce’s creamy texture. If the sauce is too thick, add a bit of reserved pasta water. For a lighter version, use half-and-half instead of heavy cream. If you notice the sauce separating, add cheese slowly over low heat and stir continuously for a smooth finish.
