Butter Chicken Sauce:

  • 1 lb boneless, skinless chicken breasts or thighs, diced
  • ½ cup plain Greek yogurt
  • 1 tbsp minced garlic
  • 1 tbsp minced ginger
  • 1 tsp garam masala

  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 3 tbsp butter
  • 1 medium onion, finely chopped
  • 2 tbsp tomato paste
  • 1 cup tomato sauce
  • ½ cup heavy cream
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Pasta:

  • 12 oz penne or rigatoni pasta
  • Water & salt for boiling
  • ½ cup grated parmesan cheese (optional)

Instructions

  1. Marinate the Chicken:
    Combine chicken, yogurt, garlic, ginger, garam masala, turmeric, cumin, paprika, salt, and pepper in a bowl. Mix well and marinate for 30 minutes or up to 24 hours in the refrigerator.
  2. Cook the Pasta:
    Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Drain and set aside.
  3. Prepare the Sauce:
    Melt butter in a deep skillet over medium heat. Sauté onions until golden brown, about 5 minutes. Add tomato paste and cook for 1 minute.
  4. Cook the Chicken:
    Add marinated chicken to the skillet, cooking for 8-10 minutes or until fully cooked.
  5. Simmer the Sauce:
    Stir in tomato sauce and simmer for 10 minutes. Lower heat and stir in heavy cream. Simmer an additional 5 minutes until the sauce thickens.
  6. Combine Pasta and Sauce:
    Toss cooked pasta in the skillet with the butter chicken sauce until fully coated.
  7. Serve:
    Garnish with fresh cilantro and sprinkle parmesan cheese if desired.

  • For a dairy-free version, substitute coconut milk for cream and use plant-based butter.
