Creamy Beef Tortellini Skillet

Description

Creamy Beef Tortellini Skillet is a rich, comforting weeknight dinner featuring ground beef, tender cheese tortellini, and a luscious, velvety sauce made from beef broth, heavy cream, and sour cream. Simple seasonings enhance the savory flavors, while a sprinkle of fresh parsley adds freshness. This one-pan dish is easy, satisfying, and ideal for family meals.

Ingredients

Scale
  • 1 lb ground beef
  • 1 package (20 oz) cheese tortellini
  • 1 cup beef broth
  • 1/2 cup heavy cream
  • 1/2 cup sour cream
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Cook tortellini according to package instructions. Drain and set aside.
  2. In a large skillet over medium heat, brown the ground beef. Season with garlic powder, salt, and pepper.
  3. Add beef broth and heavy cream to the skillet. Stir and simmer for 5 minutes, allowing the mixture to blend and thicken slightly.
  4. Gently fold in the cooked tortellini. Continue to simmer until the sauce thickens and coats the tortellini, about 3-5 minutes.
  5. Remove from heat. Spoon a dollop of sour cream over the top and garnish with chopped fresh parsley before serving.

Notes

You can substitute ground turkey or Italian sausage for the ground beef. For a lighter cream sauce, swap heavy cream with half-and-half or use Greek yogurt instead of sour cream. Prepare ahead by cooking the beef and storing it separately from the tortellini; combine and reheat before serving. If the sauce is too thin, simmer longer; if too thick, add a splash of broth. Leftovers keep well in an airtight container in the fridge for up to 3 days and can be reheated on the stove or microwave—just add a little cream or broth to refresh the sauce.
