Ingredients
- 1 box brownie mix (18–19 oz)
- 2 large eggs
- 1/4 cup vegetable oil
- 2 tbsp all-purpose flour
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, combine the brownie mix, eggs, vegetable oil, and all-purpose flour. Mix until a thick dough forms.
- Fold in chocolate chips, if using.
- Use a tablespoon or cookie scoop to drop dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 8–10 minutes until the edges are set but the centers are still soft.
- Let cookies cool on the pan for a few minutes. Transfer to a wire rack to cool completely.
Notes
You can substitute melted butter for vegetable oil for a richer flavor; try adding nuts or swapping chocolate chips for white or peanut butter chips. To make ahead, portion dough and freeze; bake directly from frozen with a slightly longer bake time. Store in an airtight container at room temp for up to 4 days. If cookies spread too much, try chilling dough before baking; overbaking will make them dry.
