Ingredients
- ½ cup freshly squeezed lime juice (from 4–5 limes)
- 1 can (13.5 oz) coconut milk
- ¼ cup sweetened condensed milk or granulated sugar (adjust to taste)
- 2 cups ice
- ½ cup cold water (optional, to thin if needed)
- Lime slices (optional, for garnish)
- Shredded coconut (optional, for garnish)
Instructions
- Add lime juice, coconut milk, sweetened condensed milk or sugar, and ice to a high-speed blender.
- Blend until the mixture is creamy, smooth, and frothy.
- Assess the thickness. If needed, add cold water and blend again to achieve your preferred consistency.
- Taste and adjust sweetness by adding more sugar or condensed milk if desired.
- Pour into chilled glasses.
- Garnish with lime slices and shredded coconut if desired.
- Serve immediately while icy cold.
Notes
For substitutions, use coconut water or light coconut milk for fewer calories, and agave or honey for sweetening. Make ahead by blending and storing in an airtight container in the fridge for up to 24 hours, but blend with ice just before serving for fresh texture. If too tart, add sweetener slowly. If too thick, thin with water. For a frozen texture, use frozen coconut milk cubes. Garnishes can be omitted.
