Ingredients
- 1 cup canned pumpkin puree

- ¾ cup granulated sugar
- ¼ cup brown sugar
- ¼ cup + 2 Tablespoons canola oil
- 1 teaspoon vanilla extract
- 1 ½ teaspoons ground cinnamon or pumpkin spice
- ½ teaspoon salt
- ½ teaspoon baking soda
- 2 teaspoons baking powder
- 2 cups all purpose flour
- 1 ⅓ cup semi-sweet chocolate chips
Instructions
- Preheat oven to 375°F and line cookie sheets with parchment paper or spray with non-stick spray.
- In a bowl, whisk together pumpkin, egg (or applesauce), sugars, oil, vanilla, and cinnamon until well blended.
- In a separate bowl, mix salt, baking soda, baking powder, and flour. Add this dry mixture to the wet mixture and combine until just mixed.
- Gently fold in the chocolate chips.
- Using a small scoop or a rounded tablespoon, drop dough onto prepared cookie sheets, placing 12 cookies per sheet.
- Bake for 10-13 minutes, until cookies are set and lightly golden.
- Remove cookies from the tray and cool on a wire rack.
Notes
Feel free to replace granulated sugar with coconut sugar or a sugar substitute for a healthier option. Cookies can be made ahead and stored in an airtight container for up to a week.
