Ingredients

Scale

For the Dough:

  • 3 cups of flour
  • 1 tsp salt
  • 1 tsp sugar
  • 2 tbsp oil
  • 1 tsp instant yeast
  • Warm water for kneading

For the Filling:

  • 250 g chicken breast, cut into small cubes
  • 1 tsp black pepper
  • 1/2 tsp salt
  • 1/2 tsp paprika
  • 1 tbsp olive oil
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese

For Assembly:

  • Beaten egg for brushing

Instructions

  • Prepare the Dough:
    • In a large bowl, mix the flour, salt, and sugar.
    • Add the instant yeast and oil, then gradually add warm water while kneading until the dough is smooth and elastic (about 8–10 minutes).
    • Cover the dough with a kitchen towel and let it rise for 1 hour or until doubled in size.
  • Prepare the Filling:
    • Heat olive oil in a skillet over medium heat.
    • Add chicken cubes and season with black pepper, salt, and paprika.
    • Sauté the chicken until fully cooked and lightly browned, about 6–8 minutes. Set aside to cool.
  • Assemble the Pastries:
    • Roll out the dough on a lightly floured surface to about 1/8-inch thickness.
    • Cut the dough into your desired shapes (circles, squares, or triangles).
    • Place a spoonful of the chicken mixture in the center of each piece, then top with mozzarella and cheddar cheese.
    • Fold the dough over the filling and seal the edges tightly by pressing them together or crimping with a fork.
  • Bake:
    • Preheat your oven to 180°C (350°F).
    • Arrange the assembled pastries on a parchment-lined baking tray.
    • Brush the tops with beaten egg for a golden, shiny finish.
    • Bake for 20–25 minutes, or until the pastries are puffed and golden brown.

Notes

  • Make-Ahead Tip: You can prepare the filling and dough in advance. Store the filling in the fridge and the dough in an airtight container until ready to use.
  • Freezer-Friendly: These pastries freeze beautifully. Place them in a freezer-safe container before baking. Bake directly from frozen, adding a few extra minutes to the cooking time.
  • Customizable Filling: Swap the chicken for sautéed mushrooms, spinach, or spiced potatoes for a vegetarian version. Experiment with herbs or add chopped veggies for added flavor.
  • Serving Ideas: Pair with garlic dipping sauce, ranch, or a fresh salad for a complete meal.
