Ingredients
- 4 Tbsp butter
- 2 cloves garlic, minced
- 4 Tbsp all-purpose flour
- 2 1/4 cups milk
- 1/2 cup freshly grated Parmesan cheese, plus more for sprinkling
- Juice of 1 lemon
- 1 Tbsp freshly chopped parsley, plus more for garnish
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- 3 zucchinis, peeled into long strips
- 2 cups shredded mozzarella cheese
- 2 cups shredded cooked chicken
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet over medium heat, melt butter. Add minced garlic and cook until fragrant, about 30 seconds.
- Whisk flour into the butter and garlic. Cook until the mixture is bubbling and golden, about 1 minute.
- Gradually pour in milk, whisking constantly. Bring to a simmer and stir in Parmesan cheese. Simmer until sauce thickens, about 2–3 minutes.
- Add lemon juice and chopped parsley. Season with salt and pepper to taste.
- Spoon a thin layer of Alfredo sauce into the bottom of a baking dish.
- On a clean surface, lay 3 strips of zucchini, overlapping slightly.
- Spoon Alfredo sauce onto zucchini strips and top with shredded chicken and a sprinkle of mozzarella.
- Roll up zucchini tightly and place in the prepared baking dish. Repeat with remaining zucchini.
- Top roll-ups with extra Parmesan cheese.
- Bake for 30 minutes or until golden brown and bubbly.
- Garnish with additional parsley before serving.
Notes
For a gluten-free version, substitute all-purpose flour with gluten-free flour blend. You can also use rotisserie chicken for convenience. Store leftovers in an airtight container in the refrigerator for up to 3 days; reheat in the oven for best results. If the sauce turns out too thick, add a splash of milk. If zucchinis release excess water, pat them dry before rolling. Try substituting mozzarella with provolone or Gruyere for a different flavor profile.
