- 2 cups mashed potatoes (freshly made or leftover)
- 1 cup cheddar cheese, shredded
- 1/4 cup Parmesan cheese, grated
- 2 large eggs
- 1/4 cup milk
- 2 green onions, chopped
- 1/2 teaspoon garlic powder
- Salt and pepper, to taste
Instructions
- Preheat your oven to 400°F (200°C). Grease a mini muffin tin with butter or cooking spray.
- In a large bowl, mix together the mashed potatoes, cheddar cheese, Parmesan, eggs, milk, green onions, garlic powder, salt, and pepper until well combined.
- Scoop the mixture into the prepared muffin tin, filling each cup to the top.
- Bake for 20–25 minutes or until the tops are golden brown and slightly crispy.
- Let the puffs cool in the tin for 5 minutes before removing them with a fork or small spatula. Serve warm.
Notes
- For an extra crispy top, sprinkle a little more cheese on the puffs during the last 5 minutes of baking.
- These can be made ahead of time and reheated in the oven for a few minutes before serving.
