Description

This Cheesy Low Carb Bowl is a flavorful, hearty dish featuring a melty mozzarella base topped with savory cooked sausage, pepperoni, olives, diced bell peppers, and a sugar-free marinara sauce. Baked to bubbly perfection and seasoned with herbs and spices, it’s perfect for a satisfying low-carb meal any time.

Ingredients

  • Diced bell pepper
  • Pepperoni slices
  • Shredded mozzarella cheese
  • Cooked ground sausage
  • Salt and pepper
  • Sugar-free marinara sauce
  • Sliced black olives
  • Garlic powder
  • Fresh basil or parsley (optional)
  • Dried oregano

Instructions

  1. Preheat oven to 375°F and lightly oil a small ceramic or glass baking bowl.
  2. Sprinkle shredded mozzarella cheese evenly across the bottom of the baking dish to form the base.
  3. Spoon marinara sauce over the cheese base, leaving some cheese visible.
  4. Add cooked ground sausage, pepperoni slices, sliced black olives, and diced bell peppers on top.
  5. Optionally add more shredded cheese over the toppings.
  6. Season with garlic powder, dried oregano, salt, pepper, and for extra heat, a pinch of red pepper flakes.
  7. Bake in the preheated oven for 10 to 15 minutes until cheese is melted, bubbly, golden around the edges, and toppings are heated through.
  8. Allow to cool about one minute, then garnish with chopped fresh parsley or basil if desired.
  9. Serve warm and enjoy.

Notes

Substitute ground sausage with ground turkey or chicken for a leaner option. Use any low-carb cheese or marinara sauce available. This dish can be made ahead and stored covered in the refrigerator for up to 2 days, reheat in the oven for best texture. If cheese isn’t melting well, cover loosely with foil while baking. Adjust seasoning and spice level to taste.
