Ingredients

  • 1 can condensed milk
  • 1 can evaporated milk
  • 1 cup coconut milk
  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 4 large eggs
  • 1/2 cup margarine or butter, melted
  • 1 tsp vanilla extract
  • For Coconut Glaze:
  • 1 cup coconut milk
  • 1/2 cup sugar
  • 1/2 cup grated coconut
  • 1 tsp vanilla extract


Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a Bundt pan.
  2. In a blender, blend all cake ingredients until smooth (you may need to do this in two batches).
  3. Pour the batter evenly into the prepared Bundt pan.
  4. Bake for 45 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
  5. While the cake bakes, prepare the glaze by combining coconut milk, sugar, grated coconut, and vanilla extract in a saucepan.
  6. Heat the coconut glaze mixture over medium heat until the sugar is dissolved and all ingredients are well incorporated. Remove from heat.
  7. Remove the cake from the oven and immediately pour the warm glaze over the hot cake.
  8. Allow the cake to cool in the pan before serving to let the glaze soak in thoroughly.

Notes

To substitute coconut milk, use whole milk with a few drops of coconut extract. Swap butter for margarine as needed. Make the cake a day ahead and store covered at room temperature or in the fridge for up to 3 days. If the glaze is too runny, simmer longer; if too thick, add a splash of coconut milk. Ensure the cake is fully cooled before slicing to maintain structure. Glaze thoroughly for extra moisture; pour slowly for even absorption.
