Cookie Shell

  • 0.5 cup unsalted butter (softened)

  • 1 large egg
  • 1 teaspoon vanilla extract
  • 0.5 cup mini chocolate chips

Cannoli Filling

  • 1 cup ricotta cheese (drained)
  • 0.5 cup powdered sugar
  • 0.5 teaspoon vanilla extract
  • 0.25 cup mini chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Whisk together flour and salt in a bowl. Set aside.
  3. In another bowl, beat butter and sugar until creamy. Mix in the egg and vanilla extract.
  4. Gradually add the flour mixture, stirring until combined, and fold in mini chocolate chips.
  5. Roll the dough into small logs, about 4 inches long, and slightly flatten them.
  6. Bake for 10-12 minutes or until golden brown. Let cool completely.
  7. For the filling, mix ricotta cheese, powdered sugar, and vanilla extract until smooth. Fold in mini chocolate chips and refrigerate.
  8. Slice each cookie open like a sandwich and pipe or spread the ricotta filling inside, then gently close the cookie.
  9. Dust with powdered sugar and sprinkle extra mini chocolate chips on top.
