Cookie Shell

- 1 teaspoon vanilla extract

Cannoli Filling
- 1 cup ricotta cheese (drained)
- 0.5 cup powdered sugar
- 0.5 teaspoon vanilla extract
- 0.25 cup mini chocolate chips
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Whisk together flour and salt in a bowl. Set aside.
- In another bowl, beat butter and sugar until creamy. Mix in the egg and vanilla extract.
- Gradually add the flour mixture, stirring until combined, and fold in mini chocolate chips.
- Roll the dough into small logs, about 4 inches long, and slightly flatten them.
- Bake for 10-12 minutes or until golden brown. Let cool completely.
- For the filling, mix ricotta cheese, powdered sugar, and vanilla extract until smooth. Fold in mini chocolate chips and refrigerate.
- Slice each cookie open like a sandwich and pipe or spread the ricotta filling inside, then gently close the cookie.
- Dust with powdered sugar and sprinkle extra mini chocolate chips on top.
