Ingredients
- 3/4 cup peach preserves
- 1/4 cup bourbon
- 2 tablespoons extra virgin olive oil
- 2 teaspoons soy sauce
- 2 teaspoons apple cider vinegar
- 2 teaspoons Dijon coarse ground mustard
- 2 teaspoons garlic, minced
- 1½ teaspoons kosher salt
- ½ teaspoon black pepper
- ¼ teaspoon red pepper flakes
- 4 salmon fillets (about 1½ pounds), skin on
- 1 tablespoon extra virgin olive oil
- 2 medium peaches, pitted, thinly sliced
- Parsley for garnish
Instructions
- Combine all marinade ingredients in a medium bowl, mixing thoroughly.
- Set aside half of the marinade for later use.
- Place the salmon fillets in a resealable bag with the remaining half of the marinade. Refrigerate for 30 minutes to 1 hour.
- Preheat oven to 375°F (190°C).
- Heat 1 tablespoon olive oil in an oven-safe skillet over medium-high heat.
- Remove salmon from marinade and sear fillets skin-side up for 2 to 3 minutes until golden.
- Flip the salmon skin-side down, add the peach slices around the fillets, and cook for another 2 to 3 minutes.
- Pour the reserved marinade over the salmon and peaches.
- Transfer the skillet to the oven and roast for 12 to 15 minutes, or until the salmon reaches an internal temperature of 145°F.
- Garnish with fresh parsley and serve.
Notes
For substitutions, apricot preserves or honey can replace peach preserves. If bourbon is unavailable, try apple cider or a mix of water and vanilla extract. Make the marinade up to 2 days ahead; store refrigerated. Leftovers can be refrigerated in an airtight container for 2 days. If salmon is overcooked, reduce oven time next batch. Slightly undercook for moist results. Thin fillets cook faster, so adjust time accordingly.
