  • 3/4 cup peach preserves
  • 1/4 cup bourbon
  • 2 tablespoons extra virgin olive oil
  • 2 teaspoons soy sauce
  • 2 teaspoons apple cider vinegar
  • 2 teaspoons Dijon coarse ground mustard
  • 2 teaspoons garlic, minced
  • 1½ teaspoons kosher salt
  • ½ teaspoon black pepper
  • ¼ teaspoon red pepper flakes
  • 4 salmon fillets (about pounds), skin on
  • 1 tablespoon extra virgin olive oil
  • 2 medium peaches, pitted, thinly sliced
  • Parsley for garnish

Instructions

  1. Combine all marinade ingredients in a medium bowl, mixing thoroughly.
  2. Set aside half of the marinade for later use.
  3. Place the salmon fillets in a resealable bag with the remaining half of the marinade. Refrigerate for 30 minutes to 1 hour.
  4. Preheat oven to 375°F (190°C).
  5. Heat 1 tablespoon olive oil in an oven-safe skillet over medium-high heat.
  6. Remove salmon from marinade and sear fillets skin-side up for 2 to 3 minutes until golden.
  7. Flip the salmon skin-side down, add the peach slices around the fillets, and cook for another 2 to 3 minutes.
  8. Pour the reserved marinade over the salmon and peaches.
  9. Transfer the skillet to the oven and roast for 12 to 15 minutes, or until the salmon reaches an internal temperature of 145°F.
  10. Garnish with fresh parsley and serve.

Notes

For substitutions, apricot preserves or honey can replace peach preserves. If bourbon is unavailable, try apple cider or a mix of water and vanilla extract. Make the marinade up to 2 days ahead; store refrigerated. Leftovers can be refrigerated in an airtight container for 2 days. If salmon is overcooked, reduce oven time next batch. Slightly undercook for moist results. Thin fillets cook faster, so adjust time accordingly.
