Description

Boston Cream Poke Cake is an easy yet elegant dessert featuring moist yellow cake soaked in creamy vanilla pudding and topped with a rich chocolate ganache. Perfect for gatherings, it combines the beloved flavors of Boston cream pie in convenient cake form. Each bite offers a luscious blend of soft cake, smooth custard, and decadent chocolate in every forkful.

Ingredients

Scale
  • 1 box yellow cake mix (plus ingredients listed on the box)
  • 2 boxes (3.4 oz each) instant vanilla pudding
  • 4 cups cold milk
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream

Instructions

  1. Preheat oven according to cake mix directions.
  2. Bake the cake in a 9×13-inch pan as instructed on the box.
  3. Allow cake to cool for 15 minutes, then poke holes all over with the handle of a wooden spoon.
  4. In a medium bowl, whisk together instant pudding and cold milk until smooth.
  5. Pour pudding over the cake, letting it seep into the holes, and smooth the top with a spatula.
  6. Chill the cake in the refrigerator for 1 hour to let the pudding set.
  7. In a microwave-safe bowl, combine chocolate chips and heavy cream. Heat in 30-second intervals, stirring until smooth and glossy.
  8. Pour the chocolate ganache over the chilled cake and spread evenly.
  9. Refrigerate for another 30 minutes before serving.

Notes

Substitute yellow cake mix with white or vanilla cake mix if desired. For the pudding, any instant flavor may be used, like chocolate or banana. Store cake tightly covered in refrigerator for up to 4 days; chocolate ganache may harden, just let stand at room temperature before serving. If pudding isn’t thickening, chill longer. For reduced sugar, use sugar-free pudding. Make ahead by preparing cake and pudding the day before, then add ganache before serving.
