Description

Blueberry Muffin Cookies with Streusel Topping combine the tender, fluffy texture of blueberry muffins with the convenience of cookies. Ingredients

  • ½ cup butter, softened
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 1 egg, room temperature
  • 1 tsp vanilla extract
  • 1½ cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp salt
  • 1 cup fresh blueberries
  • ⅓ cup blueberry jam
  • ⅓ cup all-purpose flour (for streusel)
  • ⅓ cup brown sugar (for streusel)
  • ¼ cup cold butter, cubed (for streusel)
  • 1 tsp cinnamon
  • ¼ tsp salt (for streusel)


Instructions

  1. Make streusel by combining flour, brown sugar, cold cubed butter, cinnamon, and salt in a bowl. Cut butter into dry ingredients with a fork or pastry cutter until pea-sized crumbs form. Refrigerate.
  2. In a large bowl, beat softened butter with brown sugar and granulated sugar until light and fluffy, about 2-3 minutes. Beat in egg and vanilla extract.
  3. In a separate bowl, whisk together flour, baking powder, and salt.
  4. Gradually add dry ingredients to wet ingredients, mixing until just combined.
  5. Gently fold in fresh blueberries, taking care not to break them.
  6. Portion dough into rounds and place on a parchment-lined baking sheet, spaced apart.
  7. Dollop blueberry jam onto the top of each dough round and swirl with a knife or toothpick.
  8. Remove streusel from fridge and generously top each dough round, gently pressing it in.
  9. Bake at 375°F (190°C) for 12-15 minutes until lightly golden and soft in the center.
  10. Allow cookies to cool completely before serving.

Notes

Butter can be substituted with margarine, and fresh blueberries can be replaced with frozen ones (do not thaw before mixing to avoid excess moisture). Make streusel ahead and keep refrigerated until use. Store cookies in an airtight container for up to 3 days or freeze for longer storage. If cookies spread too much, chill dough before baking. Avoid overmixing batter to keep cookies tender.
