  • 1/2 cup confectioners’ sugar
  • 1 teaspoon vanilla extract
  • 2 cups fresh blackberries
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice

  • 1/4 cup shelled pistachios, chopped

Instructions

  1. Mix crushed biscuits with melted butter and press firmly into the bottom of a lined 8×8 inch baking pan. Chill for 20 minutes.
  2. Blend finely ground pistachios with 1/4 cup confectioners’ sugar and heavy cream until a smooth paste forms. Spread evenly over the chilled biscuit base. Chill for another 20 minutes.
  3. In a separate bowl, beat cream cheese with 1/2 cup confectioners’ sugar and vanilla extract until creamy. Spread this mixture over the pistachio layer. Chill while preparing the next layer.
  4. In a saucepan, heat blackberries, granulated sugar, lemon juice, and cornstarch over medium heat. Cook, stirring, until the mixture thickens. Let it cool slightly, then spread over the cream cheese layer. Chill until fully set.
  5. Before serving, sprinkle with chopped pistachios and add fresh blackberries to garnish. Slice and serve.

Notes

To substitute digestive biscuits, graham crackers or vanilla wafers work well. For a nut allergy, use sunflower seed butter and roasted seeds. These bars can be made a day ahead; keep refrigerated in an airtight container for up to 3 days. If your compote is too runny, cook longer until thickened.
