Ingredients
- 2 cups fresh blackberries
- 2 cups plain Greek yogurt
- ½ cup honey
- ¼ cup fresh lemon juice
- 1 tbsp lemon zest
- ¼ tsp vanilla extract
- Pinch of salt
- 2 tbsp cornstarch
- 2 tbsp water
Instructions
- Puree blackberries in a food processor until smooth.
- Strain through a fine mesh to remove seeds if desired.
- Mix cornstarch and water to create a slurry.
- Heat ½ cup of the blackberry puree with the cornstarch slurry for 2 minutes.
- Cool the mixture completely.
- Whisk together yogurt, honey, lemon juice, lemon zest, vanilla extract, and salt.
- Fold in the cooled blackberry mixture.
- Chill for 2 hours.
- Churn in an ice cream maker for 20 to 25 minutes.
- Freeze for 3 hours until firm.
Notes
You can substitute Greek yogurt with any plain yogurt or use agave/maple syrup instead of honey. Substitute blackberries with raspberries or blueberries based on seasonal availability. For make-ahead, churn and store in freezer-safe container for up to 2 weeks; press plastic wrap against the surface to avoid ice crystals. If the yogurt freezes too hard, let it soften at room temperature for 10 minutes before serving. Avoid over-churning to retain creamy texture.
