  • 1 lb boneless, skinless chicken breast or thighs, sliced into thin strips
  • 2 cups mushrooms, sliced (button, cremini, or shiitake)
  • 1 cup bell peppers, thinly sliced (optional)
  • 4 cloves garlic, minced
  • 1-inch piece ginger, finely grated
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons oyster sauce
  • 2 teaspoons freshly cracked black pepper
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • 2 tablespoons vegetable or sesame oil
  • 2 green onions, chopped for garnish

Instructions

  • Toss the chicken with 1 tablespoon soy sauce and 1 teaspoon black pepper. Marinate for 10-15 minutes.
  • In a small bowl, mix the remaining soy sauce, oyster sauce, and 1 teaspoon black pepper. Set aside.
  • Heat 1 tablespoon of oil in a wok or skillet over medium-high heat. Cook the chicken for 3-4 minutes until golden and fully cooked. Remove and set aside.
  • Add the remaining oil to the pan. Sauté the mushrooms, garlic, and ginger for 3-4 minutes until fragrant and tender.
  • Return the chicken to the pan. Pour the prepared sauce over the chicken and mushrooms, stirring to coat evenly.
  • Add the cornstarch slurry and stir constantly for 1-2 minutes until the sauce thickens.
  • Garnish with green onions and serve hot with steamed rice or noodles.
