- 4 cloves garlic, minced
- 1-inch piece ginger, finely grated
- 1/4 cup low-sodium soy sauce
- 2 tablespoons oyster sauce
- 2 teaspoons freshly cracked black pepper
- 1 tablespoon cornstarch mixed with 2 tablespoons water
- 2 tablespoons vegetable or sesame oil
- 2 green onions, chopped for garnish
Instructions
- Toss the chicken with 1 tablespoon soy sauce and 1 teaspoon black pepper. Marinate for 10-15 minutes.
- In a small bowl, mix the remaining soy sauce, oyster sauce, and 1 teaspoon black pepper. Set aside.
- Heat 1 tablespoon of oil in a wok or skillet over medium-high heat. Cook the chicken for 3-4 minutes until golden and fully cooked. Remove and set aside.
- Add the remaining oil to the pan. Sauté the mushrooms, garlic, and ginger for 3-4 minutes until fragrant and tender.
- Return the chicken to the pan. Pour the prepared sauce over the chicken and mushrooms, stirring to coat evenly.
- Add the cornstarch slurry and stir constantly for 1-2 minutes until the sauce thickens.
- Garnish with green onions and serve hot with steamed rice or noodles.
