- ½ teaspoon minced ginger
- 1 fresh red or green chili, chopped
- 2 tablespoons cornstarch
- ¼ teaspoon freshly ground black pepper
For the Sauce
- ¾ teaspoon freshly ground black pepper
- 3 tablespoons light soy sauce
- 1 tablespoon dark soy sauce
- 1 tablespoon rice vinegar
- ½ teaspoon brown sugar
- 1 teaspoon toasted sesame oil
- 1 teaspoon cornstarch
- 2 tablespoons water or chicken broth
Instructions
- Make the Sauce:
In a bowl, whisk together black pepper, light and dark soy sauces, rice vinegar, brown sugar, toasted sesame oil, cornstarch, and water. Whisk until smooth and lump-free. - Marinate the Chicken:
Toss the chicken with 1 tablespoon of the sauce, cornstarch, and salt. Set aside to marinate while preparing vegetables. - Brown the Chicken:
Heat 1 tablespoon of peanut oil in a large frying pan or wok over medium heat. Add chicken in a single layer and cook until golden brown on one side, then flip and cook through. Remove from pan. - Stir-Fry the Vegetables:
In the same pan, heat the remaining oil. Sauté minced ginger, garlic, and chili for 30 seconds. Add onion and bell peppers, stir-frying until crisp-tender (2-3 minutes). - Combine:
Reduce heat to low. Whisk the sauce again, then pour it into the pan. Let it simmer for 30 seconds to thicken. Add the cooked chicken and toss to coat everything evenly. - Serve:
Sprinkle freshly ground black pepper over the dish. Serve hot with rice or noodles.
